A collaborative approach to foodservice design.
Perris High School
Terra Bites Café
Intended to positively impact student, teacher, and staff health and wellness the new student union and kitchen services the Terra Bites Café. Since opening day, the District has seen an increase in student participation. The design approach was to disperse the serving lines and display the food for maximum appeal. The back-of-house equipment package included combi-ovens that improve the food quality by combining convection cooking technology with steam and offers the staff the ability to extend the menu offer.

The transformation of the heart of the Perris High campus included a satellite serving kitchen and a Culinary Arts Café. The new Culinary Café is designed as the lab portion of a full culinary arts program where students can demonstrate skills in food production and food service skills.

“This kitchen exceeds our expectations! The front-of-house design is open for the students, it allows them to see the variety of food on offer compared to the old kitchen where students did not have that option.”
Audrey Mitchell – Director of Nutrition Services, Perris High School District
